2 (12.4 oz) cans of refrigerated cinnamon rolls with icing

6 large eggs

1 cup milk (whole or 2%)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon nutmeg (optional)

½ cup maple syrup (plus more for serving)

1 cup fresh berries (optional, for topping)

Powdered sugar (for dusting, optional)

Instructions
 

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with cooking spray.

    Open the cinnamon roll cans and set aside the icing. Cut each cinnamon roll into quarters and place the pieces evenly in the bottom of the prepared baking dish.

      In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and nutmeg until thoroughly combined.

        Pour the egg mixture evenly over the cinnamon roll pieces, ensuring they are all coated. Use a spatula to gently press down the mixture to help absorb the liquid.

          Drizzle the maple syrup over the top of the casserole, distributing it evenly.

            Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.

              While the casserole is baking, warm the icing from the cinnamon roll cans until it can be easily drizzled (you can do this in the microwave for about 10-15 seconds).

                Once baked, remove the casserole from the oven and let it cool for a few minutes. Drizzle the warm icing on top, then add fresh berries if using.

                  Dust with powdered sugar if desired and serve warm with extra maple syrup on the side.
