Instructions

Prepare the Crepes Batter:

    - In a blender, combine the rolled oats, eggs, almond milk, protein powder, vanilla extract, cinnamon, and salt. Blend until smooth and the batter has a thin consistency. Let it sit for about 10 minutes to thicken slightly.

      Cook the Crepes:

        - Heat a non-stick skillet over medium heat. Lightly grease the pan with a bit of coconut oil or cooking spray.

          - Pour about 1/4 cup of the batter into the skillet, swirling to evenly coat the bottom. Cook for about 1-2 minutes until the edges begin to lift and the top looks set.

            - Carefully flip the crepe and cook for another 1 minute until lightly golden. Remove and place on a plate. Repeat with the remaining batter.

              Make the Cinnamon Filling:

                - In a small bowl, mix together the coconut sugar, cinnamon, and melted coconut oil until well combined.

                  Assemble the Crepes:

                    - Take one crepe, spread a thin layer of the cinnamon filling over half of it, then fold the crepe in half and then half again to form a triangle. Repeat until all crepes and filling are used.

                      Prepare the Cream Cheese Drizzle:

                        - In a separate bowl, whisk together the softened cream cheese, Greek yogurt, maple syrup, and vanilla extract until smooth and creamy.

                          Serve:

                            - Drizzle the cream cheese mixture over your filled crepes. Top with your choice of sliced fruit, chopped nuts, and an extra drizzle of maple syrup.

                              Enjoy:

                                - Serve warm and enjoy the deliciousness of cinnamon roll flavor in a healthy, protein-packed form!
