2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 tablespoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

For the Cinnamon Sugar Topping:

¼ cup granulated sugar

1 tablespoon ground cinnamon

2 tablespoons unsalted butter, melted

Instructions
 

Prepare the Apples:

    - In a medium bowl, combine the diced apples with lemon juice. Toss to coat and set aside to prevent browning.

      Preheat the Oven:

        - Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper for easier removal.

          Mix Dry Ingredients:

            - In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

              Cream Butter and Sugars:

                - In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 3-5 minutes).

                  Add Eggs and Vanilla:

                      Combine Mixtures:
