Ingredients
  

1 cup all-purpose flour

1 tsp baking powder

1/4 tsp salt

1/2 cup water

1/4 cup unsalted butter

1 tsp vanilla extract

1/2 cup granulated sugar

1 tbsp ground cinnamon

Prepare the dough: In a medium saucepan, combine the water, butter, and vanilla extract. Bring to a boil over medium heat. Once boiling, reduce the heat and stir in the flour, baking powder, and salt until a dough forms. Remove from heat and let it cool for about 5 minutes.

    Shape the dough: While the dough is cooling, heat the oil in a deep skillet or frying pan over medium-high heat—enough oil to cover the bottom of the pan. Once the dough is cool enough to handle, use a cookie scoop or your hands to form small balls (about 1 inch in diameter).

      Fry the bites: Carefully drop the dough balls into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.

        Coat with cinnamon sugar: In a small bowl, mix together the granulated sugar and ground cinnamon. While the churro bites are still warm, roll them in the cinnamon sugar mixture until well-coated.
