1 loaf of challah or brioche bread, cut into 1-inch cubes (about 8 cups)

6 large eggs

2 cups whole milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 cup maple syrup

1/4 teaspoon salt

1 cup packed brown sugar

1 tablespoon ground cinnamon (for swirl)

1/2 cup chopped pecans or walnuts (optional)

Powdered sugar, for dusting

Fresh berries, for serving (optional)

Instructions
 

Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or non-stick spray.

    Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, maple syrup, and salt until well combined.

      Add Bread: Place the cubed bread into the prepared baking dish. Pour the egg mixture evenly over the bread cubes, gently pressing down to ensure all the bread is soaked.

        Create the Cinnamon Swirl: In a separate small bowl, mix the brown sugar with 1 tablespoon of ground cinnamon. Sprinkle this mixture over the soaked bread, ensuring to give it an even distribution. If using nuts, sprinkle them on top.

          Chill (Optional): For the best results, cover the dish with plastic wrap and let it sit in the refrigerator for at least 30 minutes, or overnight for a richer flavor.

            Bake: Remove the plastic wrap (if using) and bake in the preheated oven for 40-45 minutes or until the top is golden brown and the center is set.

              Serve: Allow the French toast bake to cool for 5-10 minutes before slicing. Dust with powdered sugar and serve warm, topped with fresh berries and additional maple syrup if desired.
