8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon Dijon mustard (optional)

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons grated Parmesan cheese (for topping)

1 tablespoon chopped fresh parsley (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Make Cheese Sauce: In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux. Cook for about 1-2 minutes until bubbly, but not browned. Gradually whisk in the milk, ensuring there are no lumps, and cook until the mixture thickens (about 5-7 minutes).

        Add Cheeses: Remove the saucepan from heat and stir in the shredded sharp cheddar, mozzarella, garlic powder, onion powder, and Dijon mustard (if using) until the cheese is completely melted and smooth. Season with salt and pepper to taste.

          Combine Pasta and Cheese Sauce: In a large mixing bowl, combine the cooked macaroni and cheese sauce, stirring until the pasta is evenly coated.

            Prepare for Baking: Transfer the mac and cheese mixture to a greased baking dish (about 2-quart size).

              Topping: In a small bowl, mix together the breadcrumbs and grated Parmesan cheese. Sprinkle this mixture evenly over the mac and cheese.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.
