1 lb (450g) beef sirloin, thinly sliced

2 tbsp olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 tbsp all-purpose flour

1 cup beef broth

1 tbsp Worcestershire sauce

1 tsp Dijon mustard

1 cup sour cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

12 oz (340g) egg noodles or rice (for serving)

Instructions
 

Preparation: Begin by cooking the egg noodles according to package instructions. Drain and set aside.

    Sear the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the thinly sliced beef sirloin in a single layer, seasoning with salt and pepper. Sear for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.

      Sauté Onions and Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook for about 5 minutes until softened. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and starting to brown, about 4-5 minutes.

        Thicken the Sauce: Sprinkle the flour over the mushroom mixture and stir well to combine. This will help to thicken the sauce. Cook for an additional minute, stirring constantly.

          Create the Sauce: Gradually pour in the beef broth while stirring to prevent lumps. Add the Worcestershire sauce and Dijon mustard. Bring the mixture to a simmer and let it cook for 5-7 minutes until the sauce thickens slightly.

            Finish with Sour Cream: Lower the heat, return the seared beef to the skillet, and gently stir in the sour cream until the sauce is creamy and the beef is heated through. Adjust seasoning with salt and pepper to taste.

              Serve: Serve the beef stroganoff over the cooked egg noodles or rice, garnishing with fresh chopped parsley.
