Classic Blueberry Coffee Cake

2 cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 cup sour cream

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

2 cups fresh blueberries (or frozen, if fresh is not available)

For the Streusel Topping:

¾ cup all-purpose flour

½ cup packed brown sugar

½ teaspoon ground cinnamon

¼ cup unsalted butter, melted

½ cup rolled oats (optional)

For the Glaze (Optional):

1 cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with butter or non-stick spray.

    Prepare the Streusel Topping: In a medium bowl, combine ¾ cup flour, brown sugar, cinnamon, melted butter, and rolled oats (if using). Mix well until crumbly and set aside.

      Mix the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.

        Add Wet Ingredients: Beat in the sour cream and vanilla extract until smooth and well combined.

          Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!

            Fold in Blueberries: Gently fold in the blueberries, taking care not to break them up too much.
