Ingredients
  

2 cups fresh or frozen cherries, pitted

1/2 cup granulated sugar

2 tablespoons lemon juice

1 tablespoon cornstarch

1/4 teaspoon almond extract

1 cup whipped cream (or heavy cream for homemade)

1/2 teaspoon vanilla extract

1 cup crushed graham crackers

1/4 cup unsalted butter, melted

1/2 cup chopped nuts (optional, for garnish)

Instructions
 

Prepare the Cherry Filling: In a medium saucepan over medium heat, combine the cherries, sugar, lemon juice, and cornstarch. Stir well to dissolve the sugar and bring the mixture to a gentle boil. Cook for about 5-7 minutes until the cherries have softened and the mixture has thickened. Remove from heat and stir in the almond extract. Allow cooling slightly.

    Make the Crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are well coated. Press the mixture into the bottom of a 9-inch pie dish (or serving dish) to form a crust. Bake at 350°F (175°C) for 8-10 minutes until golden, then let cool.

      Prepare the Whipped Cream: If using heavy cream, whip it in a mixing bowl with vanilla extract until soft peaks form. If using pre-made whipped cream, skip this step.

        Assemble the Cherry Delight: Once the cherry mixture is cool, spread it evenly over the graham cracker crust. Then, dollop or spread the whipped cream over the top.

          Garnish and Chill: If desired, sprinkle chopped nuts over the whipped cream. Cover and refrigerate for at least 2 hours to allow the flavors to meld and the dessert to set.
