1½ cups fresh or frozen pitted cherries

1 cup heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

½ cup unsalted butter, melted

¼ teaspoon salt

½ cup chopped walnuts (optional)

    Form the crust: Press the mixture firmly into the bottom of a 9-inch pie dish or springform pan to create an even layer. Bake at 350°F (175°C) for 8-10 minutes until lightly golden. Allow to cool completely.

      Make the cherry filling: If using fresh cherries, pit and halve them. If using frozen, thaw them while draining excess liquid. In a saucepan over medium heat, combine the cherries and ¼ cup powdered sugar. Cook for 5-7 minutes, mashing the cherries slightly until they release their juices. Remove from heat and cool.
