1 whole chicken (about 3-4 pounds), cut into pieces

8 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

3 stalks celery, sliced

2 cups egg noodles

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Juice of 1 lemon (optional)

Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken pieces, skin-side down, and brown them on both sides. This step enhances the flavor of the soup. Once browned, remove the chicken and set it aside.

    Sauté the Aromatics: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Then, add the minced garlic and cook for an additional minute until fragrant.

      Build the Broth: Pour in the chicken broth and bring it to a boil. Stir in the thyme, rosemary, bay leaf, and season with salt and pepper. Return the browned chicken to the pot, reduce the heat to a simmer, and cover. Let it cook for 30-40 minutes, until the chicken is cooked through and tender.

        Shred the Chicken: Once the chicken is cooked, remove it from the pot and allow it to cool slightly. When cool enough to handle, shred the chicken meat, discarding the skin and bones.

          Add the Noodles: Bring the broth back to a gentle boil and add the egg noodles. Cook according to package instructions (usually about 6-8 minutes), until al dente.

            Combine and Season: Return the shredded chicken to the pot. Taste the soup and adjust seasoning with additional salt, pepper, or lemon juice if using. Let it simmer for an additional 5 minutes.
