2 cups cooked chicken, shredded or diced

1 cup frozen mixed vegetables (peas, carrots, corn, green beans)

1/2 cup chopped onion

1/2 cup chopped celery

3 cloves garlic, minced

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1/2 cup milk

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup Bisquick mix

1 cup shredded cheddar cheese

2 large eggs

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large saucepan over medium heat, add a drizzle of olive oil. Sauté the chopped onion and celery for about 5 minutes until they begin to soften. Add the minced garlic and sauté for another minute until fragrant.

      Combine Ingredients: In the same saucepan, stir in the cooked chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, milk, thyme, rosemary, salt, and pepper. Mix well and let simmer for about 5-7 minutes while stirring occasionally to thicken slightly.

        Prepare the Bisquick Topping: In a medium bowl, whisk together Bisquick mix, shredded cheddar cheese, and eggs until well combined. It will be a thick batter.

          Assemble the Casserole: Pour the chicken and vegetable mixture into a greased 9x13 inch casserole dish. Spread the Bisquick topping evenly over the mixture.

            Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the top is golden brown and a toothpick inserted comes out clean.
