Classic Chicken & Rice Casserole

Ingredients
  

2 cups cooked chicken, shredded (can use rotisserie chicken)

1 cup long-grain white rice, uncooked

4 cups chicken broth

1 medium onion, diced

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 tsp paprika

1/2 tsp black pepper

Salt to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onions are translucent and the garlic is aromatic.

      Combine ingredients: In a large mixing bowl, combine the shredded chicken, uncooked rice, chicken broth, sautéed onion and garlic, mixed vegetables, cream of mushroom soup, paprika, black pepper, and salt. Stir until everything is well mixed.

        Transfer to a baking dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and stir the mixture gently.

            Add cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole. Return the dish to the oven, uncovered, and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

              Cool and serve: Once done, remove from the oven and let it cool for about 5-10 minutes. Garnish with freshly chopped parsley before serving.
