6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon white vinegar

Salt and black pepper to taste

1/4 teaspoon smoked paprika (plus more for garnish)

Fresh chives or parsley (for garnish)

Instructions
 

Begin by hard-boiling the eggs. Place the eggs in a medium saucepan and cover them with cold water. Bring the water to a boil over medium heat, then remove from heat, cover, and let them sit for 12 minutes.

    After 12 minutes, carefully transfer the eggs to a bowl filled with ice water to cool for at least 5 minutes. This helps stop the cooking process and makes peeling easier.

      Once cooled, gently tap the eggs on a hard surface and peel under running water to remove the shells.

        Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Set the egg whites aside.

          Mash the yolks with a fork until they are crumbled, then add the mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and smoked paprika. Mix until the mixture is smooth and creamy.

            Spoon or pipe the egg yolk mixture back into the hollowed egg whites, mounding it slightly for an appealing look.

              Sprinkle a little extra smoked paprika on top for garnish and add chopped chives or parsley for color and flavor.

                Chill the deviled eggs in the refrigerator for at least 15 minutes before serving for best flavor.
