For the Crust:

1 and 1/2 cups graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

For the Filling:

3 large egg yolks

1 can (14 oz) sweetened condensed milk

1/2 cup fresh key lime juice (or regular lime juice)

Zest of 2 key limes (for a zesty kick)

For the Topping:

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

Extra lime slices and zest for garnish (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

        - Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.

          - Bake the crust in the preheated oven for about 10 minutes until lightly golden. Remove from the oven and let it cool completely.

            Make the Filling:

              - In a large mixing bowl, whisk together the egg yolks until they are slightly thickened and pale in color.

                - Gradually add the sweetened condensed milk while whisking continuously until well combined.

                  - Stir in the key lime juice and lime zest. Mix until smooth. The filling will start to thicken.

                    Combine and Bake:

                      - Pour the lime filling into the cooled graham cracker crust and spread it evenly.

                        - Bake in the oven at 350°F (175°C) for 15 minutes. The filling should be set but still slightly jiggly in the center.

                          - Remove from the oven and allow it to cool to room temperature, then refrigerate for at least 3 hours or overnight for best results.

                            Prepare the Topping:

                              - In a medium bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
