2 cups graham cracker crumbs

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

1 tablespoon lemon juice

1 tablespoon all-purpose flour (optional, for stability)

Fresh berries and mint leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Mix well until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

      Bake the Crust: Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and let it cool while preparing the filling.

        Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using a hand mixer or stand mixer until smooth and creamy. Gradually add 1 cup of sugar and blend until incorporated.

          Add Vanilla and Eggs: Mix in the vanilla extract. Add eggs one at a time, mixing on low speed after each addition until just combined. Make sure not to overmix to avoid incorporating excess air.

            Incorporate Sour Cream and Lemon Juice: Gently fold in the sour cream and lemon juice until well combined. If using, also add the flour for added stability.

              Pour the Filling: Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

                Bake the Cheesecake: Place the springform pan in the oven and bake for 55-70 minutes, or until the edges are set and the center slightly jiggles when you gently shake the pan.

                  Cool and Chill: Turn off the oven and crack open the oven door, allowing the cheesecake to cool in the oven for another hour. This helps prevent cracking. Once cooled, refrigerate for at least 4 hours, preferably overnight for best flavor and texture.

                    Serve: Before serving, garnish with fresh berries and mint leaves if desired. Carefully remove the sides of the springform pan and slice the cheesecake into wedges. Enjoy!
