1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

2 cups sour cream

¼ cup all-purpose flour

Zest of 1 lemon (optional)

1 tablespoon lemon juice (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine graham cracker crumbs, ⅓ cup sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove and cool.

      Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in 1 cup sugar and vanilla extract, mixing until well combined.

        Add the Eggs: Add the eggs one at a time, mixing on low speed after each addition just until incorporated.

          Incorporate Sour Cream and Flour: Gently fold in the sour cream, flour, lemon zest (if using), and lemon juice until smooth. Be careful not to overmix.

            Pour Filling into Crust: Pour the cream cheese mixture over the cooled crust, smoothing the top with a spatula.

              Bake the Cheesecake: Bake in the preheated oven for about 60-70 minutes, or until the edges are set and the center has a slight jiggle (it will firm up as it cools).

                Cool and Chill: Turn off the oven and leave the cheesecake inside for an additional hour to prevent cracking. Remove from the oven, let it cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

                  Serve: Carefully remove the sides of the springform pan. Slice and serve plain or with your favorite fruit topping or chocolate drizzle.
