1 cup cottage cheese

1/2 cup unsweetened shredded coconut

1 cup crushed pineapple (drained)

2 large eggs

1/4 cup honey or maple syrup

1/4 cup melted coconut oil or vegetable oil

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

1/2 cup chopped walnuts or pecans (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix the Wet Ingredients: In a large mixing bowl, combine the cottage cheese, shredded coconut, crushed pineapple, eggs, honey (or maple syrup), melted coconut oil, and vanilla extract. Whisk together until well combined.

      Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon (if using).

        Combine Wet and Dry Mixtures: Gradually fold the dry ingredients into the wet ingredients, stirring gently until just combined. Avoid overmixing, as this can lead to dense muffins.
