Ingredients

1 pound chicken tenders

1 cup all-purpose flour

2 large eggs

1 cup shredded unsweetened coconut

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional for heat)

1/2 cup mayonnaise (for dipping sauce)

2 tablespoons lime juice

1 teaspoon honey

Optional: fresh cilantro for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Dipping Sauce: In a small bowl, mix together the mayonnaise, lime juice, and honey. Set aside for flavor melding.

Set Up Breading Stations: In three separate shallow bowls, set up your breading stations:

        - In the first bowl, add the flour and season with salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.

          - In the second bowl, whisk the eggs until well beaten.

            - In the third bowl, combine the shredded coconut and panko breadcrumbs evenly.

Bread the Chicken Tenders: Take one chicken tender and first coat it in the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, ensuring it is fully coated. Finally, press it into the coconut-panko mixture, ensuring an even coating. Repeat this for all chicken tenders.

Arrange on Baking Sheet: Place the coated chicken tenders on the prepared baking sheet, making sure they are spaced apart for even cooking.

Bake: Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the crust is golden brown. You can also broil for an additional 1-2 minutes to achieve a crispy texture if desired.

Serve: Remove the chicken tenders from the oven and let them rest for a couple of minutes. Serve hot with the lime-honey dipping sauce and garnish with fresh cilantro if desired.
