1 cup coconut milk

1 cup heavy cream

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon matcha powder

2 1/2 teaspoons gelatin (1 packet)

3 tablespoons cold water

A pinch of salt

Fresh fruit for garnishing (optional: berries, mango, or kiwi)

Instructions
 

Prepare the Gelatin: In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5-10 minutes until it blooms.

    Heat the Coconut Mixture: In a saucepan over medium heat, combine the coconut milk, heavy cream, sugar, and a pinch of salt. Stir constantly until the mixture is just about to simmer; do not let it boil. Remove from heat.

      Dissolve the Gelatin: Add the bloomed gelatin to the warm coconut mixture, whisking until fully dissolved.

        Add Flavor: Sift in the matcha powder and add the vanilla extract. Whisk until the matcha is fully incorporated and the mixture is smooth and well-combined.
