1 pound large shrimp, peeled and deveined

1 cup all-purpose flour

2 large eggs, beaten

1 cup shredded coconut (sweetened or unsweetened)

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

Vegetable oil for frying

Fresh lime wedges, for serving

Optional: Sweet chili sauce for dipping

Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. This helps the coating adhere better.

    Setup the Breading Station: In three separate shallow bowls, set up your breading station:

      - In the first bowl, combine the flour, garlic powder, salt, pepper, and paprika.

        - In the second bowl, add the beaten eggs.

          - In the third bowl, mix together the shredded coconut and panko breadcrumbs.

            Coat the Shrimp:

              - First, dip each shrimp into the flour mixture, coating it evenly.

                - Next, dip it into the beaten eggs, allowing any excess to drip off.

                  - Finally, coat the shrimp with the coconut and panko mixture, pressing gently to ensure it adheres well.

                    Fry the Shrimp: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot (around 350°F), carefully place the coated shrimp in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown and crispy.

                      Drain and Serve: Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain any excess oil. Serve immediately with fresh lime wedges and optional sweet chili sauce for dipping.
