8 oz. soba noodles (or whole wheat spaghetti)

1 cup cooked, shredded chicken breast

1/2 cup cucumber, julienned

1/2 cup carrots, julienned

1/4 cup red bell pepper, thinly sliced

1/4 cup green onions, chopped

3 tablespoons sesame oil

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon peanut butter

1 teaspoon honey (or maple syrup for vegan)

1 teaspoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Cook the Noodles: In a large pot, bring water to a boil and add soba noodles. Cook according to package instructions until al dente, usually around 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a medium bowl, whisk together the sesame oil, soy sauce, rice vinegar, peanut butter, and honey (or maple syrup) until smooth. Adjust the seasoning with salt and pepper to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooked noodles, shredded chicken, cucumber, carrots, red bell pepper, and green onions. Pour the sauce over the top and toss gently to ensure all ingredients are evenly coated.

        Chill: Cover the bowl with plastic wrap or a lid and refrigerate the noodle salad for at least 30 minutes to allow the flavors to meld together.
