Ingredients

2 pounds beef stew meat (cut into bite-sized pieces)

1 medium onion (chopped)

3 cloves garlic (minced)

2 cups beef broth

1 cup sliced mushrooms

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 cups egg noodles

1 cup frozen peas (optional)

Fresh parsley (chopped, for garnish)

Instructions

Prepare the Beef: In a large bowl, season the beef stew meat with salt and pepper. Sear the beef in a skillet over medium-high heat until browned on all sides. This step is optional but enhances the flavor.

Combine Ingredients: Transfer the browned beef to the crockpot. Add the chopped onion, minced garlic, sliced mushrooms, beef broth, Worcestershire sauce, soy sauce, thyme, and rosemary. Stir well to combine all the ingredients.

Cook the Mixture: Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.

Prepare the Noodles: About 30 minutes before serving, cook the egg noodles according to package instructions until al dente. Drain and set aside.

Finish the Dish: Once the beef is cooked, stir in the frozen peas (if using) and cooked egg noodles. Let everything heat through for about 10 minutes. Adjust seasoning with additional salt and pepper if needed.

Serve: Ladle the beef tips and noodles into bowls and garnish with freshly chopped parsley. Enjoy this comforting, hearty dish warm.
