Ingredients
  

1 lb ground beef (or turkey for a lighter version)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

4 cups beef or vegetable broth

1 tbsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper, to taste

1 cup frozen mixed vegetables (like peas and green beans)

1 tbsp olive oil

Fresh cilantro or parsley for garnish

Optional: Sour cream and shredded cheese for topping

Instructions
 

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Brown the Meat: Push the vegetables to the side of the pot, add the ground beef (or turkey) into the center, and cook until browned, about 8 minutes. Stir to combine with the veggies. Add minced garlic and cook for another minute.

      Add Spices: Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Stir well to coat the meat and vegetables with the spices.

        Combine Ingredients: Pour in the diced tomatoes, black beans, corn, and broth. Stir to combine all ingredients. Bring the soup to a gentle boil.

          Simmer: Reduce heat to low and let it simmer for about 20-25 minutes. This allows the flavors to meld beautifully.

            Add Frozen Vegetables: Stir in the frozen mixed vegetables and let them heat through for an additional 5 minutes.

              Adjust Seasoning: Taste the soup and adjust seasoning if necessary, adding more salt, pepper, or spices according to your preference.
