1 medium yellow onion, diced

2 medium carrots, diced

3 cloves garlic, minced

4 tablespoons butter

1/4 cup all-purpose flour

4 cups chicken or vegetable broth

1 cup heavy cream

2 cups sharp cheddar cheese, grated (plus more for topping)

1 teaspoon Dijon mustard

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon paprika (optional for a little heat)

Fresh parsley, chopped (for garnish)

Sauté Vegetables: In a large pot over medium heat, melt the butter. Add the diced onion, carrots, and broccoli, cooking until the vegetables soften, about 5-7 minutes. Stir in the garlic and cook for an additional 1-2 minutes until fragrant.

    Make the Roux: Sprinkle the flour over the cooked vegetables. Stir continuously for about 2 minutes to create a roux, ensuring no lumps form.

      Add Broth: Gradually pour in the chicken or vegetable broth while whisking to prevent lumps. Increase the heat to bring the mixture to a simmer, and let it cook for about 10-15 minutes until the broccoli is tender.

        Blend Soup (Optional): For a smoother texture, use an immersion blender to partially purée the soup in the pot, or carefully transfer a portion of it to a blender and blend until smooth. Return it to the pot.

          Incorporate Cream & Cheese: Reduce heat to low, then stir in the heavy cream, grated cheese, Dijon mustard, salt, black pepper, and paprika. Stir continuously until the cheese melts completely and the soup is creamy.
