2 cups corn kernels (fresh, frozen, or canned)

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1/2 cup diced red bell pepper

1/2 cup diced green onions (scallions)

1/4 cup chopped fresh cilantro (optional)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

Salt and pepper to taste

Tortilla chips or vegetable sticks for serving

Instructions
 

Prep Corn: If using fresh corn, cook it in boiling water for about 5 minutes. For frozen corn, thaw and drain. If using canned, drain well.

    Mix Cream Base: In a large mixing bowl, combine the softened cream cheese and sour cream. Use a hand mixer or spatula to blend until smooth and creamy.

      Add Spices: Stir in the garlic powder, onion powder, cumin, salt, and pepper to the cream mixture. Mix well until all the spices are evenly distributed.
