Ingredients
  

1 cup cornmeal

1 cup all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp salt

1 cup buttermilk

1/2 cup unsalted butter, melted

2 large eggs

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup shredded cheddar cheese (optional)

1/2 cup honey

1/4 cup unsalted butter (for syrup)

Instructions
 

Preheat your waffle iron according to manufacturer’s instructions.

    In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt until well combined.

      In another bowl, mix the buttermilk, melted butter, and eggs until smooth.

        Pour the wet ingredients into the dry ingredients and fold gently until just combined. Do not overmix; some lumps are okay. If desired, stir in the corn kernels and shredded cheddar cheese.

          Lightly grease the waffle iron with non-stick spray or brush with oil. Pour a small ladleful of batter onto the center of the waffle iron (follow the instructions for your specific iron to determine the exact amount).

            Close the waffle iron and cook until the waffles are golden brown and crispy, usually about 3-5 minutes, depending on your waffle iron.

              While the waffle bites are cooking, prepare the honey butter syrup. In a small saucepan over low heat, melt 1/4 cup unsalted butter, then stir in the honey until well combined and warmed through. Set aside.

                Once cooked, carefully remove cornbread waffle bites from the iron and keep warm in the oven while you repeat the process with the remaining batter.

                  To serve, drizzle the honey butter syrup over the warm cornbread waffle bites and enjoy.
