12 oz rigatoni pasta

1 cup cottage cheese (preferably whole milk or ricotta for creaminess)

1 can (14 oz) crushed tomatoes

1 cup vodka

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup heavy cream

1/4 teaspoon red pepper flakes (adjust to taste)

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

    Prepare the Sauce Base: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and cook until translucent, about 4-5 minutes. Add the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

      Add the Tomatoes and Vodka: Pour in the crushed tomatoes and vodka. Allow the mixture to simmer for about 10-15 minutes, letting the alcohol cook off and the sauce thicken slightly.

        Incorporate Cottage Cheese: Stir in the cottage cheese, allowing it to melt into the sauce. If you desire a smoother texture, you can use an immersion blender to blend the sauce to your liking.

          Add Cream and Season: Pour in the heavy cream and stir to combine. Add dried oregano, salt, and black pepper to taste. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
