6 medium-sized Granny Smith apples, peeled and cored

2 cups all-purpose flour

1 tablespoon granulated sugar

1 teaspoon salt

1 teaspoon baking powder

1/2 cup unsalted butter, chilled and cubed

1/4 cup ice cold water

1 cup brown sugar, packed

1 teaspoon ground cinnamon

2 cups water

1 teaspoon vanilla extract

Prepare the Apples: Preheat your oven to 350°F (175°C). After peeling and coring the apples, you can set them aside while you prepare the dough.

    Make the Dough: In a large mixing bowl, combine the flour, granulated sugar, salt, and baking powder. Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add the ice cold water, mixing just until the dough comes together. Do not overwork the dough.

      Roll Out the Dough: On a floured surface, roll out the dough to about 1/8 inch thick. Cut the dough into 6 large squares, large enough to wrap around the apples.

        Assemble the Dumplings: Place one apple in the center of each square. In a small bowl, mix the brown sugar and cinnamon together. Sprinkle about a tablespoon of the sugar-cinnamon mixture into each apple and top with a little bit of vanilla extract.

          Wrap the Apples: Bring the corners of the dough up over the apple, pinching to seal tightly. If necessary, use a little water to help the dough stick together.

            Prepare the Baking Dish: In a 9x13 inch baking dish, pour in the 2 cups of water and the remaining sugar-cinnamon mixture. Place the wrapped dumplings in the dish, seam side down.

              Bake: Bake in the preheated oven for about 40-45 minutes, or until the dough is golden brown and the apples are tender.

                Serve: Allow the dumplings to cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream, drizzled with some of the cooking syrup from the baking dish.
