10 large cloves of garlic, peeled and sliced

2 tablespoons butter

2 tablespoons olive oil

1 medium onion, chopped

1 large potato, peeled and diced

4 cups vegetable or chicken broth

1 cup heavy cream

Salt and white pepper to taste

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

Fresh parsley, chopped (for garnish)

Crusty French bread, for serving

Instructions
 

Sauté Aromatics: In a large stockpot, melt the butter and olive oil over medium heat. Add the sliced garlic and chopped onion. Sauté until the onion is translucent and the garlic is fragrant, about 5-7 minutes. Do not let the garlic brown.

    Add Potatoes: Stir in the diced potato and cook for another 5 minutes, allowing them to absorb the flavors.

      Add Broth: Pour in the vegetable or chicken broth, bring to a gentle boil, then reduce the heat to simmer. Cook for 20 minutes or until the potatoes are tender.

        Blend the Soup: Remove the pot from heat and use an immersion blender to puree the soup until smooth, or transfer it to a blender in batches (be cautious with hot liquids!).

          Stir in Cream: Return the pot to low heat and stir in the heavy cream. Season with salt, white pepper, and thyme to taste. Allow the soup to warm through for another 5 minutes.

            Serve: Ladle the garlic soup into bowls. Garnish with chopped parsley and serve with slices of crusty French bread for dipping.
