Cowboy Butter Chicken Pasta

2 boneless, skinless chicken breasts, diced

8 oz pasta (your choice: penne, fusilli, or fettuccine)

1/2 cup unsalted butter

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon dried oregano

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice level)

1/4 cup fresh parsley, chopped

1/2 cup chicken broth

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and black pepper to taste

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Cook the Chicken: In a large skillet over medium-high heat, add 1 tablespoon of butter. Once melted, add the diced chicken and season with salt, pepper, smoked paprika, chili powder, oregano, onion powder, and cayenne pepper. Sauté the chicken for about 5-7 minutes, or until it’s golden brown and cooked through. Remove chicken from the skillet and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, reduce heat to medium and add the remaining butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the chicken broth and bring to a simmer, scraping any bits from the bottom of the skillet.

        Combine Ingredients: Add the halved cherry tomatoes and fresh spinach to the skillet, cooking until the tomatoes start to soften and the spinach wilts, about 3-4 minutes. Then, add the cooked chicken back into the skillet along with the drained pasta. If the mixture seems dry, you can add the reserved pasta water, a little at a time, until you reach the desired consistency.

          Finishing Touches: Mix everything until well combined, and allow it to cook for an additional 2-3 minutes. Stir in the chopped parsley and adjust seasoning if needed.

            Serve: Plate the pasta into bowls, generously sprinkle with grated Parmesan cheese, and add an extra sprinkle of parsley for garnish. Enjoy!
