2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

6 cups chicken broth (homemade or store-bought)

2 cups shredded rotisserie chicken (or cooked chicken of choice)

2 cups egg noodles (or your favorite pasta)

1 cup frozen peas

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Juice of half a lemon (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic, sliced carrots, and celery. Cook for an additional 5-7 minutes, until the vegetables begin to soften.

      Add the dried thyme, rosemary, and paprika, stirring until fragrant, about 1 minute.

        Pour in the chicken broth, bringing the mixture to a boil. Reduce heat to a simmer and let it cook for 15 minutes or until the vegetables are tender.

          Add the shredded chicken to the pot, followed by the egg noodles. Cook according to the noodle package instructions, usually about 6-8 minutes.

            Stir in the frozen peas and season with salt and pepper to taste. Let simmer for another 2-3 minutes, or until the peas are heated through.

              If desired, add a squeeze of lemon juice for brightness; stir well.

                Serve hot, garnished with freshly chopped parsley.
