Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 carrots, diced

2 stalks celery, diced

1 red bell pepper, diced

1 medium zucchini, diced

1 cup green beans, chopped

1 cup kale or spinach, roughly chopped

1 can (14 oz) diced tomatoes with green chilies

4 cups vegetable broth

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

1 tablespoon fresh lemon juice (optional)

Fresh herbs for garnish (such as parsley or basil)

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 5 minutes.

Add the Vegetables: Stir in the carrots, celery, and red bell pepper. Cook for another 5 minutes, stirring occasionally, until they start to soften.

Incorporate Remaining Veggies: Add the zucchini, green beans, and kale (or spinach). Stir to combine and cook for another 3-4 minutes.

Add Tomatoes and Broth: Pour in the canned diced tomatoes with their juices and the vegetable broth. Stir well to combine all ingredients.

Season the Soup: Sprinkle in the smoked paprika, cumin, cayenne pepper, salt, and pepper. Bring the soup to a gentle boil.

Simmer: Reduce the heat to low and let the soup simmer for about 20-25 minutes, or until all the vegetables are tender.

Finish Up: If desired, stir in fresh lemon juice for a zesty kick. Taste and adjust seasoning if needed.

Serve: Ladle the soup into bowls and garnish with fresh herbs for a burst of flavor. Enjoy warm!
