Ingredients

1 pound fresh lump crab meat

1/2 cup breadcrumbs (preferably panko for added crunch)

1/4 cup mayonnaise

1/4 cup cream cheese, softened

1/4 cup chopped green onions

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 tablespoon Old Bay seasoning

1 teaspoon lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

Oil for frying (vegetable or canola)

Instructions

In a large mixing bowl, combine the lump crab meat, breadcrumbs, mayonnaise, cream cheese, green onions, minced garlic, Dijon mustard, Worcestershire sauce, Old Bay seasoning, lemon juice, salt, and black pepper.

Gently fold the mixture together, being careful not to break apart the crab meat too much.

Once well combined, refrigerate the mixture for about 30 minutes to firm up.

After refrigeration, form the mixture into small balls, about 1 inch in diameter.

In a large frying pan, heat about 1/2 inch of oil over medium heat until hot but not smoking.

Carefully place the crab balls into the hot oil, frying them in batches to avoid overcrowding. Cook until golden brown on all sides, about 3-4 minutes per side.

Use a slotted spoon to remove the crab balls from the pan and drain them on paper towels.

Serve warm with a dipping sauce of your choice, such as tartar sauce or a spicy remoulade.
