1 ½ cups all-purpose flour

½ cup rolled oats

½ cup brown sugar, packed

½ cup granulated sugar

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, melted

1 cup cranberry sauce (store-bought or homemade)

1 teaspoon vanilla extract

½ cup chopped nuts (walnuts or pecans, optional)

½ cup fresh or frozen cranberries (for extra texture, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving a little overhang for easy removal later.

    Make the Crust and Topping: In a large mixing bowl, combine the flour, rolled oats, brown sugar, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Pour in the melted butter and vanilla extract. Mix until everything is combined and crumbly. Reserve 1 cup of the mixture for the topping.

      Press the Base: Spread the remaining mixture evenly in the bottom of the prepared baking dish. Use a spatula or your hands to press it down firmly. Bake in the preheated oven for about 10-12 minutes, until just set but not browned.

        Layer the Filling: Once the base has baked, remove it from the oven and let it cool slightly. Evenly spread the cranberry sauce over the crust. If you like, you can sprinkle fresh or frozen cranberries on top of the sauce for added texture.

          Add the Topping: Crumble the reserved oat mixture over the cranberry layer, sprinkling it evenly across the top. If using chopped nuts, sprinkle them on top of the crumble layer for extra crunch.

            Final Bake: Return the dish to the oven and bake for another 25-30 minutes, or until the topping is golden brown and the cranberry filling is bubbly.

              Cool and Slice: Allow the cranberry crumble bars to cool completely in the pan on a wire rack. Once cooled, lift it out using the parchment overhang and slice into bars. Store them in an airtight container for up to one week.
