Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

4 large eggs

1 teaspoon vanilla extract

1 tablespoon orange zest

1 cup fresh or frozen cranberries, coarsely chopped

1/2 cup orange juice

1/2 teaspoon ground cinnamon

For the Glaze:

1 cup powdered sugar

2-3 tablespoons orange juice

1/2 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-12 cup Bundt pan, ensuring all crevices are well-covered.

Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.

Add Eggs and Flavoring: Add eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract and orange zest.

Combine Batter: Gradually add the dry ingredients to the wet mixture, alternating with orange juice, starting and ending with the flour mixture. Mix until just combined.

Fold in Cranberries: Gently fold in the coarsely chopped cranberries until evenly distributed throughout the batter.

Bake the Cake: Pour the batter into the prepared Bundt pan and smooth the top. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake: Allow the cake to cool in the pan for 15 minutes before turning it out onto a wire rack to cool completely.

Prepare the Glaze: In a small bowl, whisk together powdered sugar, orange juice, and vanilla extract until smooth. Adjust consistency with more orange juice if necessary.

Glaze the Cake: Once the cake is completely cool, drizzle the glaze over the top. Allow it to set for a few minutes before slicing.
