4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh or frozen cranberries

1/2 cup orange juice (freshly squeezed is best)

Zest of 1 orange

1/3 cup honey

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon thyme (fresh or dried)

1/4 teaspoon cayenne pepper (optional for a bit of heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season both sides of the chicken breasts generously with salt and pepper.

    Brown the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for 5-7 minutes on each side, or until they are golden brown and cooked through. Once cooked, remove them from the skillet and set aside.

      Make the Glaze: In the same skillet, add the cranberries and cook for 2-3 minutes until they begin to burst. Stir in the orange juice, orange zest, honey, Dijon mustard, garlic powder, thyme, and cayenne pepper (if using). Bring the mixture to a simmer.

        Simmer the Sauce: Reduce the heat and allow the sauce to simmer for about 5-7 minutes, until it thickens slightly and the cranberries break down, forming a lovely glaze.

          Glaze the Chicken: Return the browned chicken breasts to the pan, coating them well with the cranberry-orange glaze. Cook for an additional 2-3 minutes until the chicken is warmed through and glistening.

            Serve: Remove from heat and garnish with freshly chopped parsley. Serve the chicken hot, drizzled generously with the remaining glaze.
