4 bone-in pork chops (about 1-inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh cranberries (or frozen, thawed)

1/2 cup orange juice (freshly squeezed if possible)

Zest of 1 orange

1/4 cup honey

1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard

1/2 teaspoon ground cinnamon

1/4 teaspoon red pepper flakes (optional for a kick)

Fresh thyme or parsley, for garnish (optional)

Instructions
 

Prepare the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops. Sear for about 4-5 minutes on each side, or until they are golden brown and cooked through (an internal temperature of 145°F). Once done, remove the chops and set aside to rest.

      Make the Glaze: In the same skillet, reduce the heat to medium and add the fresh cranberries, orange juice, orange zest, honey, balsamic vinegar, Dijon mustard, ground cinnamon, and red pepper flakes (if using). Stir well and cook for about 8-10 minutes, or until the cranberries burst and the glaze thickens.

        Glaze the Chops: Return the pork chops to the skillet, spooning some of the glaze over them. Cook for an additional 2 minutes, allowing the flavors to meld together.
