12 mini sweet bell peppers (variety of colors)

8 oz (225g) cream cheese, softened

1/4 cup fresh parsley, finely chopped

1/4 cup fresh chives, finely chopped

2 tablespoons fresh dill, finely chopped

1 tablespoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Olive oil (for drizzling, optional)

Fresh herbs for garnish (optional)

Instructions
 

Prep the Peppers: Preheat your oven to 375°F (190°C). Slice the mini sweet bell peppers in half lengthwise and remove any seeds and membranes. Place them cut-side up on a baking sheet lined with parchment paper.

    Make the Filling: In a mixing bowl, combine the softened cream cheese, chopped parsley, chives, dill, lemon juice, garlic powder, and onion powder. Mix until smooth and well combined. Season with salt and pepper to taste.

      Stuff the Peppers: Using a small spoon or piping bag, generously fill each mini pepper half with the cream cheese mixture, making sure to pack it in well.

        Bake the Peppers: Drizzle a little olive oil over the stuffed peppers if desired. Bake in the preheated oven for about 15-20 minutes, or until the peppers are tender and the filling is slightly golden.

          Garnish and Serve: Remove from the oven and allow them to cool slightly. Garnish with additional chopped herbs if desired. Serve warm or at room temperature as a delightful appetizer or side dish.
