2 cups chicken breasts, diced

1 cup mushrooms, sliced (preferably a mix of cremini and shiitake)

1 medium onion, finely chopped

3 cloves garlic, minced

3 cups chicken broth

1 cup heavy cream

1 cup spinach, chopped

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon thyme (dried)

1 teaspoon rosemary (dried)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: ½ cup grated Parmesan cheese

Sauté Aromatics: In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and garlic, sautéing until they are translucent and fragrant (about 3-4 minutes).

    Cook Chicken: Add the diced chicken to the pot. Season with salt, pepper, thyme, and rosemary. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned on all sides and mostly cooked through.

      Add Mushrooms: Stir in the sliced mushrooms and cook for another 5 minutes, allowing them to release their moisture and soften.
