Ingredients

8 ounces lasagna noodles, broken into pieces

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound Italian sausage (mild or spicy, based on preference), casings removed

4 cups chicken broth

1 cup heavy cream

1 cup ricotta cheese

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions

Cook the Noodles: In a pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.

Brown the Sausage: Add the Italian sausage to the pot. Use a spoon to break it into smaller pieces. Cook until browned and fully cooked through, about 7-10 minutes.

Combine Broth and Cream: Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to come to a simmer.

Add Seasonings and Cheese: Stir in the ricotta cheese, dried basil, dried oregano, and season with salt and pepper. Continue stirring until the ricotta is well blended into the soup.

Incorporate the Noodles: Add the broken lasagna noodles to the pot and simmer for about 10-12 minutes, stirring occasionally until the noodles are tender.

Finish with Cheese: Once the noodles are cooked, mix in the grated Parmesan cheese and shredded mozzarella cheese. Stir until the cheeses melt and the soup is creamy.

Serve: Ladle the soup into bowls and garnish with freshly chopped parsley and additional Parmesan cheese if desired.

Enjoy: Serve warm and enjoy the delightful flavors of creamy Alfredo lasagna in a comforting soup form!
