1 cup unsalted butter (2 sticks)

4 cloves garlic, minced

2 cups heavy cream

1 ½ cups freshly grated Parmesan cheese

1 cup freshly grated Pecorino Romano cheese

½ teaspoon salt, or to taste

½ teaspoon freshly cracked black pepper, or to taste

½ teaspoon nutmeg (optional)

1 tablespoon chopped fresh parsley, for garnish

Instructions
 

Melt the Butter: In a large saucepan over medium heat, melt the butter. Be careful not to let it brown, as you want a smooth white sauce.

    Add Garlic: Once the butter has melted, add the minced garlic and sauté for about 1-2 minutes, just until fragrant. Avoid browning the garlic as it can become bitter.

      Pour in Heavy Cream: Slowly pour in the heavy cream, stirring continuously. Bring the mixture to a gentle simmer.

        Add Cheese: Gradually whisk in the freshly grated Parmesan and Pecorino Romano cheeses. Stir until the cheeses are completely melted and the sauce is smooth. If you prefer a thicker sauce, let it simmer for another 3-5 minutes, stirring regularly.

          Season the Sauce: Season with salt, black pepper, and nutmeg (if using). Taste and adjust the seasoning as needed.

            Serve and Garnish: Once the sauce has thickened to your desired consistency, remove it from the heat. Pour the Alfredo sauce over your favorite pasta—fettuccine is traditional! Garnish with freshly chopped parsley for a pop of color and serve immediately.
