12 oz spaghetti or pasta of choice

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus extra for garnish

2 tablespoons lemon juice

1/4 cup extra virgin olive oil

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (optional)

Cherry tomatoes, halved (for garnish)

Instructions
 

Cook Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare Avocado Sauce: In a food processor or blender, combine the ripe avocados, minced garlic, basil leaves, lemon juice, and olive oil. Blend until smooth and creamy. Adjust the consistency by adding reserved pasta water a little at a time until desired creaminess is reached.

      Season: Taste the avocado sauce and season with salt, pepper, and red pepper flakes (if using). Blend again to combine.

        Combine: In a large mixing bowl, combine the drained pasta with the creamy avocado sauce. Toss gently to coat the pasta evenly.

          Serve: Divide the creamy avocado pasta into bowls. Top with grated Parmesan cheese, halved cherry tomatoes, and garnish with extra basil leaves. Serve immediately.
