Creamy Avocado Pasta

12 oz (340g) pasta of choice (spaghetti, fettuccine, or penne)

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, packed

1/4 cup freshly grated Parmesan cheese (plus more for serving)

2 tablespoons olive oil

2 tablespoons fresh lemon juice

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional, for a little heat)

Cherry tomatoes, halved (for garnish)

Extra basil leaves (for garnish)

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

      Prepare the Avocado Sauce:

        - In a food processor, combine the ripe avocados, minced garlic, basil leaves, Parmesan cheese, olive oil, lemon juice, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add reserved pasta water a few tablespoons at a time until you reach your desired consistency.

          Combine Pasta and Sauce:

            - In a large mixing bowl, toss the cooked pasta with the avocado sauce until evenly coated. Adjust seasoning with more salt and pepper if needed. If the sauce is too thick, add more reserved pasta water to loosen it up.

              Add Spice (if desired):

                - Sprinkle in the red pepper flakes for a hint of heat and mix well.

                  Serve:

                    - Divide the creamy avocado pasta into bowls. Top with halved cherry tomatoes, additional Parmesan cheese, and fresh basil leaves as garnish. Drizzle a little olive oil over the top for extra richness.
