Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup oats (old-fashioned for texture)

1 cup chocolate chips (milk or dark, as preferred)

1/2 cup mini marshmallows

1/4 cup chopped nuts (pecans or walnuts, optional)

Sprinkles (for decoration)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.

Cream the Butters and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract, mixing until well combined.

Mix the Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually incorporate the dry mixture into the wet mixture, stirring until just combined.

Incorporate Oats and Mix-ins: Fold in the oats, chocolate chips, mini marshmallows, and nuts (if using) until evenly distributed throughout the dough.

Scoop the Dough: Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Decorate: Top each dough ball with a few sprinkles for a cheerful back-to-school look.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are just set. They may look slightly underbaked; this is perfect for a soft cookie.

Cool Down: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Serve and Enjoy: Once cooled, pack them up for school lunches, or enjoy them fresh out of the oven!
