Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup cream cheese, softened

2 cups whole milk

1/2 cup sour cream

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 cup breadcrumbs (preferably panko)

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and stir for about 1-2 minutes until the mixture is bubbly and lightly golden. Slowly add the milk, whisking continuously to prevent lumps.

Add the Cream Cheese: Once the mixture is smooth, add in the softened cream cheese and stir until melted and combined.

Incorporate the Cheeses: Reduce the heat to low and add the shredded cheddar and mozzarella cheeses. Stir until fully melted and smooth. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.

Combine Pasta and Sauce: Pour the cooked macaroni into the cheese sauce, stirring until all the pasta is evenly coated.

Transfer to Baking Dish: Pour the macaroni and cheese mixture into a greased 9x13 inch (or similar size) baking dish.

Prepare the Topping: In a small bowl, mix the breadcrumbs with a little melted butter and sprinkle evenly over the mac and cheese for a crunchy topping.

Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden and bubbly.

Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
