8 oz (225g) pasta (penne or fusilli works great)

2 tbsp olive oil

3 cloves garlic, minced

1 cup broccoli florets

2 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

1 cup grated Parmesan cheese (or nutritional yeast for a vegan alternative)

Salt and pepper to taste

1/2 tsp red pepper flakes (optional, for heat)

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
