1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 carrot, chopped

1 teaspoon ground ginger

1 teaspoon ground cumin

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer version)

Salt and pepper, to taste

Fresh thyme leaves for garnish (optional)

Pumpkin seeds for garnish (optional)

Prepare the Squash: Start by peeling and dicing the butternut squash into small, even cubes. This helps it cook uniformly and blend smoothly later.

    Sauté Vegetables: In a large pot over medium heat, add the olive oil. Once heated, add the diced onion and sauté for about 5 minutes, or until translucent. Next, add the minced garlic and chopped carrot, cooking for another 3 minutes until fragrant.

      Add Spices: Stir in the ground ginger and cumin, cooking for an additional minute to toast the spices slightly, enhancing their flavors.

        Combine Ingredients: Add the diced butternut squash to the pot, followed by the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the squash is tender when pierced with a fork.

          Blend the Soup: Once the squash is cooked, remove the pot from heat. Using an immersion blender, carefully blend the soup until smooth and creamy. If you don't have an immersion blender, you can transfer the soup in batches to a countertop blender, but be cautious of the hot liquid.

            Add Coconut Milk: Stir in the coconut milk (or heavy cream) for added richness and creaminess. Season with salt and pepper to taste. Heat the soup gently for another 5 minutes to blend the flavors.

              Serve: Ladle the soup into bowls. Garnish with fresh thyme leaves and sprinkle with pumpkin seeds if desired for an added crunch.
