4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth

1 cup heavy cream

1 cup milk

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

2 tablespoons olive oil

2 green onions, sliced (for garnish)

Salt and pepper to taste

Optional: Cooked and crumbled bacon for topping

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Cook Potatoes: Add the diced potatoes to the pot, and pour in the vegetable broth. Bring the mixture to a boil, then reduce heat to simmer. Cover and cook until potatoes are tender, about 15-20 minutes.

      Blend the Soup: Once the potatoes are soft, use an immersion blender to puree the soup to your desired consistency. For a creamier texture, blend it smoothly; for a chunkier soup, blend only half of it.

        Add Cream and Seasoning: Stir in the heavy cream and milk, then add the Cajun seasoning and smoked paprika. Simmer for another 5-10 minutes to let the flavors meld. Taste and adjust the seasoning with salt and pepper.

          Serve: Ladle the soup into bowls. Top with sliced green onions and crumbled bacon, if desired.
