Ingredients

8 oz fettuccine or linguine pasta

1 lb shrimp, peeled and deveined

1/2 lb smoked sausage, sliced

1 tablespoon olive oil

1 tablespoon Cajun seasoning

4 cloves garlic, minced

1/2 cup diced onion

1/2 cup diced bell pepper (green or red)

1/2 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons chopped fresh parsley (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Prepare the Shrimp and Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 3-4 minutes. Remove the sausage from the skillet and set aside.

Sauté Aromatics: In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes until they are softened. Add the minced garlic and cook for another minute until fragrant.

Cook the Shrimp: Add the shrimp to the skillet and sprinkle with Cajun seasoning. Sauté the shrimp for about 2-3 minutes per side until they turn pink and opaque. Be careful not to overcook!

Make the Creamy Sauce: Pour in the chicken broth and let it simmer for about 2-3 minutes to reduce slightly. Lower the heat and stir in the heavy cream and grated Parmesan cheese. Let it simmer for another 2-3 minutes until the sauce thickens. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

Combine and Serve: Return the cooked sausage to the skillet and toss everything together with the cooked pasta. Season with salt and pepper to taste. If you want it spicier, feel free to add more Cajun seasoning.

Garnish: Serve the creamy Cajun shrimp pasta in bowls, garnished with fresh parsley.
